Diary The industry faces three big challenges: One is the uncertainty, like the stability (and possible the increment) of the demand, the supply of feedstock, management of internal operations; others relate to the management of time and inventory (of feedstock, of finished products, etc). This fact, make the industries to look for new tools and/or methods that let them take decision to overcome this challenges. The patisseries or bakeries conform an important proportion of the food industry of the country and they characterize because some of their feedstock, like the finished products, are highly perishable, so that makes that new challenges inherent of management of the production systems arise. In this paper, a model of discrete simulation of the operative process of a bakery is made, so it can be identified the critic points and evaluate some alternatives that let improve the performance of the system, with the relation between the inventory and the finished products. Additionally, some statistical tools are used to analyze some factors that influence the performance of the system.
